Baked Burritos

  • 1T oil
  • 1 zucchini
  • 1 large carrot
  • 1-2 c mushrooms (whole)
  • 1 large onion
  • 4 cloves garlic
  • 1 serrano pepper
  • whatever veggies you have in your fridge that are expiring (cauliflower is great)
  • 2t cumin
  • 2t chili powder
  • 1/2t each: onion, garlic powders, smoked paprika
  • salt and pepper to taste
  • Refried beans
  • Spanish rice
  • Flour tortillas (store-bought work fine)
  • Salsa, guacamole, sour cream, cheese (whatever fillings you like)

  1. Shred/grate vegetables with a food processor/grater.
  2. Heat oil in a large frying pan on medium and add onions, garlic and chili pepper until onions are translucent. Add remaining ingredients and fry on medium/medium-high until liquid is evaporated. Adjust seasonings as necessary.
  3. Preheat oven to 375 and lightly oil a cookie sheet. Fill each tortilla with a few tablespoons of beans, veggies, rice, and finish with whatever other fillings you're using (don't use more than 1T cheese inside). Fold burrito and place on cookie sheet.
  4. Once the cookie sheet is full of burritos, lightly sprinkle with cheese and bake for 10-20 minutes or until browned and slightly crispy.
