Banana Loaf

Based on a recipe from Smitten Kitchen.


  • 4 ripe bananas
  • 1/3 c melted salted butter (76g)
  • 3/4 c light brown sugar
  • 1 egg, beaten
  • 1 t vanilla
  • 1 t baking soda
  • 1/4 t salt
  • 1 t cinnamon
  • 1/2 t nutmeg
  • dash cloves
  • 1.5 c of flour
  • 1/2 c chopped walnuts
  • 1/2 c chocolate chips


  1. Preheat oven to 350 and grease two small loaf pans.
  2. Mash up the bananas and mix in melted butter. Add the sugar, egg, vanilla and spices and stir until well mixed. Then sprinkle on salt and baking soda, and finally add flour and stir until just mixed. Fold in nuts and chocolate chips.
  3. Divide batter evenly between two small loaf pans and bake for about 45 minutes or until toothpick comes out clean. Check after 35 minutes - if they are browning too quickly, lower temperature to 325 for remaining time (depends on your oven).
  4. Cool on a rack and remove from pans ones cooled.
