Broccoli Soup


Ingredients

  • 6 c broccoli
  • 3 c mushrooms
  • 1 onion
  • 4 cloves garlic
  • 4 c vegetable broth
  • 2 c water
  • 1 T oil

Directions

  1. Chop broccoli into flowerettes and 1/2inch stem pieces.
  2. Roughly chop mushrooms, onions, and garlic.
  3. In a large pot, saute onion and garlic in oil until translucent.
  4. Add rest of ingredients, and boil until broccoli is tender.
  5. Puree. Return to heat to thicken if necessary.
