Butternut Squash au Gratin


Ingredients


  • 1 Butternut squash
  • 1 onion, finely chopped
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 tbsp margarine, melted
  • 1 egg replacer
  • 3/4 c soy milk
  • 3/4 c shredded Swiss cheese

Directions


  1. Peel outer skin of squash with peeler or knife.
  2. Halve squash lengthwise and cut into thin slices.
  3. Place slices in oven-safe bowl with onion, salt, pepper and melted butter. Toss well. Bake, covered, at 375 degrees for 30 minutes.
  4. Beat egg replacer, milk and cheese.
  5. Remove cover from baking dish and pour cheese mixture evenly over squash.
  6. Bake until golden brown, about 20 minutes.
