Carrot Cake


Ingredients

  • 3 Cups shredded Carrots
  • 1 1/4 Cup of Sugar
  • 2 Cups Flour
  • 1/2 Teaspoon of Salt
  • 2 Teaspoons of Baking Powder
  • 1/2 Teaspoon of Baking Soda
  • 2 Teaspoons of Cinnamon
  • 1/2 Teaspoon of Nutmeg
  • 1/2 Teaspoon of Cloves
  • 1/2 Teaspoon of powdered ginger
  • 1/2 Cup of Orange Juice
  • 3/4 Cup of Canola Oil
  • 1/3 Cup of Raisins
  • 2/3 Cup shredded coconut
  • 1 Cup of Chopped Walnuts

Directions

  1. Preheat oven to 350 and lightly greese pan.
  2. Combine dry ingredients and mix well.
  3. Add carrots, oil, and orange juice.
  4. Fold in raisins, nuts and coconut.
  5. Pour into pan and bake for 45 minutes, or until toothpick comes out clean.
  6. Once completely cooled, top with Creamcheese Icing.
