Carrot Puff

Ingredients


  • 6 c cubed turnips ( or 1/2 and 1/2 carrots and turnips )
  • 2 T butter
  • 2 eggs, beaten
  • 3 T flour
  • 1 T brown sugar
  • 1 t baking powder
  • 3/4 t salt
  • 1/8 t pepper
  • pinch each of nutmeg, cadamom, cinnamon
  • 1/2 c fine bread crumbs
  • 2 T melted butter

Directions


  1. Cook turnip until tender.
  2. Drain and mash.
  3. Add butter and egg. Beat well.
  4. Combine flour, sugar, baking powder, salt, pepper and nutmeg. Stir.
  5. Butter a casserole dish and put in mixture.
  6. Combine crumbs and butter, and sprinkle on top.
  7. Bake at 375 degrees for 25 minutes or until light brown on top.
