Chickpea Curry


Ingredients


  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 carrot, chopped
  • 1 roasted sweet potato
  • 1 tbsp olive oil
  • 2 c drained, cooked chickpeas (a single can, if using canned)
  • 1 can coconut milk
  • 2 or 3 tbsp curry powder
  • 1 tbsp turmeric
  • handful of cherry tomatoes, or 1 chopped med. tomato
  • 1 tsp sea salt
  • black pepper and chili peppers, to taste

Directions


  • Saute the onion, garlic, and carrot in the olive oil on medium-high heat, until onion is cooked.
  • Add the cherry tomatoes, and cook a few minutes longer.
  • Add all remaining ingredients, and cook for 15 more minutes.
