Chickpea Cutlets


  • 1c cooked chickpeas
  • 2T olive oil
  • 1/2c wheat gluten
  • 1/2c bread crumbs
  • 1/4c veggie broth
  • 2T soy sauce
  • 2 cloves garlic
  • 1/2t lemon zest
  • 1/2t dried thyme
  • 1/2t paprika
  • 1/4t sage
  • olive oil for frying


  1. Mash chickpeas with oil.
  2. Add remaining ingredients and knead until strings of gluten are formed (about 3 minutes).
  3. Preheat skillet to medium.
  4. Divide dough into 4 equal pieces and form each into cutlet shape (about 6x4) by stretching and flattening by hand.
  5. Pour "moderately thin" layer of oil in pan and fry cutlet on each side for about 6 minutes, or until browned. OR
  6. Bake at 375 on lightly oiled baking sheet for 20 minutes, then flip and bake for another 8-10 minutes.
