Cornbread

A nice savoury vegan cornbread.


Ingredients


  • 2 cups cornmeal
  • 1 cup unbleached all-purpose flour
  • 2 teaspoon baking powder
  • 1/3 cup canola oil
  • 2 tablespoons maple syrup
  • 2 cups soymilk
  • 2 teaspoons apple cider vinegar
  • 1/2 teaspoon salt
  • 1/2c frozen corn

Optional Ingredients

  • 2 chili peppers, diced
  • 1/8c cheddar, diced

Directions


  1. Preheat oven to 350F if using a baking dish, and 400F if making muffins.
  2. Mix all ingredients into a bowl, and whisk or mix until smooth.
  3. Bake for 20-30 minutes
