Cream of Broccoli Soup


Ingredients


  • 1T oil/butter
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 3-4c vegetable broth (depending on how thick you like your soup)
  • 3 small crowns/stems broccoli, roughly chopped (about 3c)
  • 1c carrot, roughly chopped
  • 2c cauliflower, roughly chopped
  • 1c heavy cream
  • 1t Dijon (original recipe called for 1/2t and wasn't noticeable)
  • 1t Worcestershire sauce (original recipe called for 1/2t and wasn't noticeable)
  • 1c (or more) aged Cheddar cheese, shredded

Directions


  1. Brown onions and garlic in oil.
  2. Add vegetables and stock. Bring to boil and reduce to simmer for about 5 minutes, or until veggies are tender.
  3. Blend soup.
  4. Add remaining ingredients, return to simmer. Season with salt and pepper.
