Curried Quinoa


  • 1c quinoa
  • 1.75c half-strength broth
  • 2T butter
  • 1 yellow onion, diced
  • 1 clove garlic, diced
  • 3T raisins
  • 3T water
  • 1t sugar
  • 1t cumin
  • 1/2t tumeric
  • 1/4t paprika, cinnamon, and cardamom
  • 1/4c slivered almonds
  • cilantro for garnish


  1. Combine quinoa with 1T butter and broth in a pot. Bring to a boil and then simmer for 15 minutes or until cooked.
  2. Melt remaining tablespoon of butter in a frying pan and brown onions and garlic. Add almonds and fry until toasted, stirring frequently so they don't burn.
  3. Deglaze with 3T water.
  4. Add raisins and seasoning, mix well, and then add cooked quinoa. Mix everything together and heat through. Season to taste with salt. Top with cilantro.
