Double-Choco Cookies

  • 1/2c margarine
  • 3/4c sugar
  • 2c flour
  • 3/4c cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp vanilla
  • 1 egg replacer
  • 1/2c - 3/4c soymilk
  • 1 cup chocolate chips

  • In a large bowl, cream together oil/margarine and sugar.
  • Mix in flour, cocoa, baking soda, salt, vanilla, egg replacer, and soymilk. Stir in chocolate chips.
  • Form into 1-inch balls and put onto cookie sheets. Slightly flatten the balls with a fork.
  • Bake for 10-12 minutes in a 350F preheated oven. They should be slightly undercooked when removed from the oven. This gives cookies that are almost like a brownie. If you want crisp, cookie-like cookies, bake for a few minutes longer.
