Falafel


Ingredients


  • 1c dried chickpeas
  • 1/2 large onion, diced (~1c)
  • 2T chopped parsley
  • 2T chopped cilantro (optional)
  • 1t salt
  • 4 cloves garlic
  • 1t cumin
  • 1t baking powder
  • 4-6T flour (I used wheat flour once and chana flour another time. Very different results but both were yummy)
  • Oil for frying

Directions


  1. Soak chickpeas overnight. Drain and rinse.
  2. Combine chickpeas, onion, and spices in a blender and blend until smooth but not pureed. Add greens and mix to combine.
  3. Sprinkle in baking powder and flour and mix until it no longer sticks to your hands. Form a ball and refrigerate in a bowl for at least an hour.
  4. Form into balls and deep fry in a wok until dark brown on the outside.
