Focaccia Bread


  • 5 cups white flour (unbleached all-purpose works well)
  • 2 tsp salt
  • 2 cups warm water
  • 2 1/4 tsp dry yeast
  • 6 tbsp olive oil
  • 1 tsp coarse salt
  • Toppings (fresh rosemary, garlic, onions, cracked pepper, parsley)


  1. Measure flour and salt into a large bowl, mix.
  2. Pour in water, mix in yeast and 3 tbsp of the olive oil.
  3. Pour dough onto a clean surface, knead for a few minutes.
  4. Cover bowl and let rise until doubled (about an hour). Note: this step can be skipped if using instant yeast.
  5. Spread 1.5 tbsp oil onto a pan, scrape dough into the pan and out to the edges. A cookie sheet will work, or a pizza stone.
  6. Poke indentations on the top with fingertips, drizzle/coat with remaining 1.5 tbsp oil, sprinkle with coarse salt.
  7. Let rise until doubled. Put toppings on, lightly pressed into dough.
  8. Put into 450F pre-heated oven. Bake for 25 minutes or until golden brown.
