French Onion Soup


  • 3T butter or margarine
  • 4 onions, sliced
  • 4 garlic cloves, chopped
  • 2 bay leaves
  • 1C red wine
  • 3T all-purpose flour
  • 2L (8C) beef broth
  • Slices of decent bread (baguette?)
  • Gruyere or swiss cheese


To make the broth:

  1. Melt the butter in a large pot, add onions, garlic, bay leaves, salt, and pepper. Cook until onions are carmelized, about 30-45 minutes.
  2. Add wine, bring to a boil and reduce until the wine has evaporated.
  3. Remove bay leaves.
  4. Dust with the flour, cook for a few minutes.
  5. Season with salt and pepper.

To serve, fill bowls with broth, add slices of bread and cheese. Broil for a couple minutes and serve.
