Hollandaise


Ingredients

  • 3 egg yolks
  • 2.5t lemon juice
  • dash cayenne
  • 1/4t salt
  • 1/4t dijon mustard
  • 1/3c butter

Directions

  1. Combine all but butter in a bowl and blend until smooth.
  2. Melt butter on medium-low until bubbling, but not burnt.
  3. Slowly poor melted butter into bowl while blending.
