Lemon Loaf


Ingredients


  • 1/2 c butter
  • 1 c white sugar
  • 1 1/2 c flour
  • rind of 2 lemons
  • pinch salt
  • 1 tsp baking powder
  • 2 eggs beaten
  • 1 t vanilla
  • 1/2 c milk

Directions


  1. Cream margarine and sugar.
  2. Add eggs, vanilla, and rind of lemon.
  3. Mix in dry ingredients alternately with milk (ending with dry).
  4. Bake at 350 for 45 - 60 min
  5. Mix juice of lemons with 1/4 c sugar. Spoon over loaf while hot.
