Lentil Soup


Ingredients


  • 1 carrot, diced
  • 1 medium onion, diced
  • 3 cloves garlic
  • 2 tbsp wine (optional)
  • 2 cups vegetable broth
  • 2 cups water
  • dash cardamom
  • dash cinnamon
  • pepper to taste
  • salt to taste
  • 1 cup masoor dal (red lentils)

Directions


  1. Saute carrot, onion, and garlic in a saucepan with margarine or oil until soft.
  2. Add remaining ingredients. Bring to a boil.
  3. Reduce heat and cover. Simmer until lentils are cooked (15-20 minutes).
