Mexican Black Bean Soup


Ingredients


  • 3 cans Black beans
  • 4c vegetable broth
  • 1 can diced tomatoes
  • 10 mushrooms
  • 1 bell pepper
  • 1 large onion
  • 1 tbsp vegetable oil
  • 2 cloves garlic
  • cilantro
  • 1 tsp cumin
  • 1c cheddar cheese, shredded
  • 1/2c sour cream

Directions


  1. Wash and slice mushrooms and pepper, rinse beans
  2. Dice onion and mince garlic
  3. In a large soup pot, saute garlic, diced pepper and mushrooms in vegetable oil and 8-10 minutes
  4. Add diced tomatoes, stock, and spices. Stir.
  5. Add cans of black beans
  6. Simmer together for 30 minutes
  7. Shred cheese
  8. top each bowl of soup with 2tbsp of cheese and 1tbsp of sour cream.
