Nut Loaf


Ingredients


  • 2 onions, diced
  • 12 cloves garlic, chopped
  • 1 beet
  • 3 carrots
  • 1 large zuccini
  • 4 or 5 sticks celery
  • 2 cups shredded mushroom
  • 1/4 cup tahini
  • 1/4 cup almond butter
  • 1/2 cup pecans
  • 1/2 cup walnuts
  • 1 tbsp sesame seeds
  • 4 tbsp tamari
  • 1/2 tsp cracked black pepper
  • 1/2 tsp oregano.
  • 1 cup bread cubes or crumbs.
  • nutritional yeast to flavour.

Directions


  1. Shred beets, carrots, zuccinni, and celery in a food processor.
  2. Saute onions and garlic in a saucepan until onions are transparent.
  3. Add veggies to the pot, cook until liquid is evaporated.
  4. Add tamari, pepper, and oregano, remove from heat.
  5. Combine all nuts in a food processor and blend until a paste. Shouldn't be completely smooth.
  6. Add nuts and bread crumbs to vegetables.
  7. Place in a pan and spread out evenly. Sprinkle nutritional yeast and/or more crushed nuts on top. Bake at 300 for at least 20 minutes.
