Pancakes


Ingredients


  • 1 c flour
  • 1/2 c oats
  • 2 t baking powder
  • 1/2 t salt
  • 1 t sugar
  • 1/2 t cinnamon
  • 1/4 t nutmeg
  • 1/2 c pecan pieces
  • 1 T oil
  • 1 t vanilla
  • 1 egg
  • 3/4 c milk
  • 1/2 c plain yoghurt

Directions


  1. Combine dry ingredients in a bowl and mix well. Add optional nuts and apples.
  2. Turn frying pan to medium temperature and lightly grease.
  3. Add wet ingredients to dry and mix.
  4. Use a 1/4c measure to pour into pan.

Optional Topping


  1. Dice the remaining half apple and toss with a dash of cinnamon, pinch of brown sugar, and about 2t melted butter.
  2. Cover and microwave for about 30 seconds.
