Puddin'


Berry Puddin' Ingredients

  • 3 T cornstarch
  • 3 T boiling water
  • pinch salt
  • 1/6 c sugar
  • 1(ish) c berries
  • 1 c milk
  • 1 T vanilla
  • 2 T butter

Choco Puddin' Ingredients

  • 3 T cornstarch
  • 3 T cocoa
  • 3 T boiling water
  • pinch salt
  • 1/6 c sugar
  • 2 c milk (choco milk is good too!)
  • 1 T vanilla
  • 2 T butter

Pistachio Puddin' Ingredients

  • 1/2 c salted pistachio nuts
  • 1/3 c sugar
  • 2 T water
  • 3 T cornstarch
  • 3 T boiling water
  • pinch of salt
  • 2 c milk
  • 1 t vanilla extract
  • 2 T butter

Directions (for either)

  1. Mix together cornstarch and boiling water in a bowl until very smooth. For pistachio pudding, combine pistachios and sugar in a food processor and grind til nuts are fine (to taste, depending on how large you want the chunks to be in your pudding), then add 2T water. For berry pudding, combine berries and milk in a blender and blend until smooth.
  2. Combine dry ingredients in a pot and mix well. Add cornstarch mixture and mix well. Set heat to medium high.
  3. Slowly begin to add some milk and whisk to reduce lumps. Bring to a boil, stirring constantly.
  4. Once boiling, remove from heat, add vanilla and butter and stir until thickened and butter is melted.
  5. Pour into serving dishes and chill.
