Rice & Peas


Ingredients


  • 1 (14-ounce) can light coconut milk
  • 1/4 c water
  • 1/2 tsp ground allspice
  • 1/2 tsp salt
  • Pinch of freshly ground black pepper
  • 3 fresh thyme sprigs
  • 1 garlic clove, crushed
  • 1 c long-grain white rice
  • 1 (15-ounce) can dark kidney beans, rinsed and drained

Instructions


  1. Put coconut milk, water, allspice, salt, pepper, thyme, and garlic in a saucepan and bring to a boil
  2. Stir in rice, reduce heat, cover and cook for 20 minutes
  3. Remove thyme & garlic, stir in beans, let sit 5 minutes before serving
