Roasted Winter Vegetables


Ingredients

  • 1/2 lb carrots cut into 1/4" slices
  • 1/2 lb fennel cut into 1/4" slices
  • 1 head garlic - cloves separated, peeled, left whole
  • 1/2 lb onions cut into wedges
  • 1/2 lb parsnips cut into 1/4" slices
  • 1/2 lb potatoes cut into 1/4" slices
  • 1/2 lb rutabaga cut into 1/4" slices
  • 6 shallots, peeled and halved
  • 1/2 lb sweet potatoes cut into wedges
  • 1/2 lb winter squash cut into 1/4" slices

  • 1/4 c olive oil
  • 2 Tbsp Balsamic vinegar
  • 1 Tbsp chopped fresh savoury
  • 1 Tbsp chopped fresh thyme
  • salt and pepper

Directions

  1. In a large bowl, toss veggies with oil, vinegar & herbs, salt and pepper.
  2. Transfer to a large greased baking pan.
  3. Roast @ 425 45 - 50 min or until tender and golden turning occasionally.
