Sloppy Joes

  • 1T oil
  • 4 garlic cloves, chopped
  • 1/2 onion, chopped
  • 1/2 green pepper, chopped
  • 1/2 red pepper, chopped
  • 1 stick celery, chopped
  • 1 pkg yves ground round (Mexican)
  • 1T chili powder (I used about 3/4T)
  • 3/4c beer (darker is better), room temperature
  • 1/2c tomato "stuff" (I used tomato paste and water. Tomato sauce will also work)
  • 1T soy sauce
  • green onions (to taste)
  • chili flakes (to taste)
  • salt and pepper (to taste)

  1. Heat oil in a pot on medium-high and cook garlic, onion, peppers and celery for about 5 minutes, or until onions are translucent.
  2. Add in ground round and chili powder and mix well. Cook until it becomes fragrant.
  3. Add in the beer, tomato stuff, soy sauce and chili flakes. Reduce heat to medium and simmer until desired thickness.
  4. Mix in green onions, season with salf and pepper, and serve warm on top of a toasted bun.
