Vegan Yorkshire Pudding


  • 1/3 lb medium-firm tofu
  • 1 cup soy milk
  • 1 cup unbleached white flour
  • 1 tsp baking powder
  • 1 tsp salt
  • Oil


  1. Take 3x3 muffin tray, and put some oil (half a tablespoon or so) into the bottom of each hole. Put the tray in a 425 degree oven, and let the oil heat up for 5 minutes or so.
  2. Blend tofu and soy milk in a blender or food processor until smooth.
  3. In a mixing bowl, mix the flour, baking powder, and salt.
  4. Mix the wet and dry ingredients together.
  5. Take the tray out, and quickly but very carefully spoon the batter into the holes. The oil is hot and may spatter!
  6. Bake in the oven for 20 minutes or so, until the tops brown.

Makes 9 yorkshire puddings.
