Vietnamese Noodle Soup


AKA: Vegan Pho (sort of)


Ingredients


  • Broth:
    • 8 cups vegetable stock
    • 3 tbsp soy sauce
    • 8 garlic cloves, peeled and coarsely chopped
    • 1 small onion, diced
    • 1 1-inch piece of ginger
    • 2 cinnamon sticks
    • 2 pods star anise
    • 2 bay leaves

  • Soup:
    • 1 lb rice noodles
    • bean sprouts
    • shredded cabbage
    • basil, cilantro, and any other greens
    • scallions
    • fake meat (seitan) (optional)
    • garnishes: lime wedges, chili rounds, salt and pepper

Directions


Broth:


  1. Char ginger in a stockpot.
  2. Add all remaining ingredients and boil for at least 20 minutes.
  3. Remove large/inedible bits.

Soup:


  1. Cook rice noodles in a pot as per directions. Drain and split into bowls.
  2. Add remaining ingredients to bowls.
  3. Ladle broth over noodles and vegetables into bowls.
  4. Season with garnishings, if desired.
