If you have the time and patience to make them, these Perogies will blow your mind.

Matt

What Caitlin is neglecting to say in her message is that these are possibly the best perogies ever. They are an entire different class of food than the bland, flavourless, mushy-textured crud you get at a grocery store. They are far better than the butter-drenched heart-busters at the Ukranian Cultural Centre.

As I expressed earlier today to Matt, America sucks for perogies... at the 'regular' grocery stores (equivilant of Safeway/Save-on-Foods) there are none to be found, I've trolled the aisles more than once looking for them specifically.

I do most of my grocery shopping at a small ethnic/organic food store, which does stock them on occasion. They're pretty good but also pretty expensive, so I only buy them sometimes. I will try this recipe and see the goodness for myself.

The original recipe called for smoked gouda, but I couldn't find any. I imagine it would be even more amazing with the smoky flavour ...

Did you try your local Safeway? While I find it hard to advocate going there most of the time, I have noticed smoked gouda amongst their "fancy" cheeses.

"Fancy" by Safeway's standards, anyway.

No, I was just at Dollar Groceries. I think I've bought smoked Gouda from Safeway in the past, but I didn't feel like walking the extra 2 blocks in the freezing rain :)

Next time you're looking for fancy cheese, though, you should definitely try applewood smoked cheddar cheese. Oohh boy, it's a nice treat!
